Whenever I’m traveling, one of my favorite things to do is to check out the cool coffee shops in the area. I went to college in San Diego and have been back many times since but had yet to make it to the uber-cute, uber-Instagrammable Communal Coffee until my last visit in October. While my mom took Briar to the zoo to see her cousins (thanks Mom!), I strapped Landon onto my back and we explored this gem in North Park.

Iced Coffee Date Shake | Ann-Marie Loves

I used to be able to get by on one cup of coffee a day. Then I had Briar and it got bumped up to at least two cups a day. Then I had Landon and it turned into a freaking free-for-all. Most days, I’ll drink two cups of hot coffee in the morning and then a cup of cold brew in the afternoon and I love it so much. I do have to say that there is nothing quite as good as that first cup in AM, especially when it doesn’t need to be reheated several times. All subsequent cups are good but not as amazing as that first hit of caffeine after five hours of interrupted sleep.

Needless to say, I’m always on the hunt for new ways to make my coffee habit even better. Now that we’re in the thick of summer, I like experimenting with different cold brew recipes and was so excited when I had dates on hand and could finally try “The Speed Dater” recipe from this video.

This blog is fast becoming a food blog, no? Ha! My cooking skills are still basic AT BEST so anytime I learn something new or come up with an easy recipe, I feel the overwhelming need to share my insights ;)

Chickpeas With Spinach + Yogurt | Ann-Marie Loves

Chickpeas with spinach and Greek yogurt is one of my favorite and — most importantly — fastest lunch time staples. In total, it takes about seven minutes to put together which is huge when you’re starving and you have a toddler and an infant clamoring for your attention. Here’s how you make it:

Cook chickpeas over low heat for a few minutes until they have been cooked to your liking.

Throw in a giant handful of spinach. You can chop it up finely or you can leave it whole and treat it as more of a salad base. Your choice.

Next, put a whopping spoonful of Greek yogurt on top. (Good lord, I love Greek yogurt.) If I have it on hand, I’ll often use feta cheese in place of the yogurt. Just depends on my mood that day.

Mix it allllllll together now.

And finally, add in hot sauce (the spicier, the better!). That’s it!  A healthy meal in a matter of minutes.
